Ingredients
•1 lb. Boar's Head bologna (Fleischwurst) •1/2 lb. Swiss cheese (Emmentaler) •6 big German Crunchy Gherkins (Barrel pickels-Hengstenberg) •3 tbl. of the pickle juice •1 small diced onion •5 tbl. of extra virgin olive oil (EVO) •salt and pepper •1/2 tbl. of oregano •2 tbl. of vinegar
Cuisine: Cooking time: 15 mins Serving: 4 to 6 people

This is my variation on the traditional German ham salad (Swiss style). I don’t like to use the mayo and other unnecessary products that I see used to intice the American audience. I feel you can take this recipe real close to its roots and still satisfy the general American palate.

Directions

  • Step 1  Bologna, pickles and cheese – cut in stripes / Onions – dice – combine all ingredients
  • Step 2 Dressing: combine vinegar, oil, salt, pepper, oregano and pickle juice and pour over bologna mixture
  • Step 3 let it sit for 30 minutes before serving – the longer it sit the better :)

German ham saladHere you can find the secret ingredients that I love to use. I find the German barrel picked at Meijers and our local Jungle Jim’s. Jungle Jim’s also had the vinegar and spices I list in the ingredients section.
