Ingredients
1 cup pitted dates, 1/4 cup raw hazelnuts or Pecans, 1/4 cup raw almonds, 1/4 cup chia seeds, 1 tsp. maca powder, shredded coconut (Optional)
Cuisine: Cooking time: 15 mins Serving: 2 people

I’ve been incorporating, or been trying to incorporate maca into my diet. While it’s in Shakeology, I don’t believe it’s at a high enough dose for my needs. So came across a recipe and made some adjustments that works real well for me and wanted to share. Now it should be noted I’m not an expert on selecting the right source of Maca, I just went to Whole Foods and could only find the the brand Gaia. So I plan to research maca sourcing later.

Instructions
  1. I used my Vitamix, but a food processor might be better.  Crush the nuts to a course mixture.
  2. Move nut mixture in to a large bowl and add the chia seeds, maca powder and mix well.
  3. Place dates in food processor and mix until a smooth paste forms. Getting the mixture out of the vitamix was painful and time consuming. So use food processor if possible.
  4. Mix everything together in bowl.
  5. Roll the mixture in to 12 balls and coat in optional shredded coconut. Now there is no easy way to do this. I tried to be elegant and use two spoons, but you will come to the point where you need to suck it up and use your hands.
  6. Refrigerate until ready to enjoy!
