Ingredients
•1/4 Medium-sized Yam or Sweet Potato, washed and cut into 1 inch chunks •1/2 Large carrot, washed and cut into 1 inch chunks •1/2 large beet, washed and cut into 1 inch chucks •1/4 yellow onion, peeled and cut into large wedges •2 tsp. extra virgin olive oil •Himalayan Salt to taste

I found this wonderful recipe from Beachbody’s Ultimate Reset. Now I have to confess that I did not complete the Ultimate Reset because week 2 and 3 are strict Vegan….which was too much for me. Take away my steak or chicken and maybe I can survive…but then take away my eggs for breakfast??? Ain’t gonna happen! But my husband loved all the meal plans and stuck with it…losing 11 pounds for his effort. But the real reward comes from understanding how to prepare and cook better rounded meals…such as this Roasted Root Medley.

Directions:

  • Preheat oven to 400 degrees F
  • In a bowl, toss all the ingredients together.
  • Spread on a cookie sheet and bake for 40 to 50 minutes or until tender. Turning one or twice to prevent burning
